Texas Trash Dip


Texas Trash Dip

1 (8 oz) block of Cream Cheese (softened)
1 cup Sour Cream
2 cans Smooth Style Refried Beans
1 can Mild Rotel (if you want more spice - use any Rotel)
1 can chopped Green Chilis
2 cups Cheddar Jack Cheese (may need more)

I used my stand mixer to mix everything to make it easier -- but any sort of mixer would be fine.

Mix together all ingredients except for the cheese. Spread into a 13x9 inch pan, evenly. Cover with cheese. Bake at 350 for about 20 minutes or until the cheese is melted and everything is warm.

Serve with Tortilla Chips or Frito Scoops.

We had this yesterday, and everything was gone except a few tortilla chips -- I was amazed!

Black Bean & Corn Salsa


Black Bean & Corn Salsa
1 – 15 OZ Can of Black Beans (drained & rinsed)
1 – 15 OZ Can of Whole Kernel Corn (drained)
1 – 10.5 OZ Can of Rotel (drained)
¼ c. Red Bell Pepper - Minced
½ c. Red Onion - Minced
¼ c. Fresh Cilantro – Finely Chopped
¼ c. Jalapeno – Minced (optional)
Salt, Pepper & Garlic Powder to taste

Dressing:
1/3 c. Red Wine Vinegar
1/3 c. Vegetable Oil
1/3 c. Lime Juice

Instructions:
Mince the Red Bell Pepper, Red Onion & Jalapeno (if using) and place them in a mixing bowl.  Next, chop up the cilantro and leave it on the cutting board – we will add this later.  Open all cans and begin by draining and rinsing the black beans.  Once the black beans are drained and rinsed, add them to the mixing bowl.  Continue with the corn & the Rotel in the same manner until all 3 cans of ingredients are in the mixing bowl.

Measure all of your liquids for the dressing into a 2 cup measuring cup and once they are all in (1/3 c. of each), use a small whisk or a fork to mix them together well.  Pour the mixture over the bowl of ingredients.

Add the cilantro to the top and stir to mix all ingredients and incorporate the cilantro and dressing.  Taste and add salt/pepper/garlic powder as desired.  Enjoy by the spoonful, or on a corn tortilla chip.

Mexican Chicken Lime Soup


Mexican Chicken Lime Soup

Makes 4 servings

3 Split Chicken Breasts with the skin
1 Medium Onion, diced
1 Minced Garlic Clove or the equivalent of the jarred kind
1 can of Green Chiles
1 can of Fire Roasted Tomatoes
2-3 Limes
4 cups of Chicken Stock
1 tablespoon of Wildtree Roasted Garlic Grapeseed Oil
2 1/4 teaspoons of Wildtree Chiplote Lime Rub
1 teaspoon of Wildtree Taco Seasoning
1-2 teaspoon(s) Kosher Salt
Cilantro (optional)

Toppings: Lime Tortilla Chips, Plain Tortilla Chips, Cubed Avocado, Cliantro

Start by preheating your oven to 400 degrees. I gently lifted the skin off of the chicken to season it. Under the skin I sprinkled some salt and 1/4 teaspoon of the Wildtree Chile Lime Rub replace the skin on the meat - then repeat the same seasonings on the bottom side of the chicken. You can sprinkle some of the Garlic Grapeseed Oil on the chicken before you roast it. Roast for 20 minutes or until the internal temp is 160 degrees. Set it aside to cool. Once it is cooled, discard the skin and bones. Then shred the meat or cut it into cubes.

To start the soup, add 1 tablespoon of the Wildtree Garlic Grapeseed Oil to a large stock pot. Heat it over medium low heat, and add in the onion. Let the onion sautee lightly to get translucent - it'll take about 8 minutes. Add in the can of Garlic, Green Chiles, Fire Roasted Tomatoes, Chicken Stock, remaining 1 teaspoon of the Wildtree Chile Lime Rub, Taco Seasoning, Lime juice, 1-2 teaspoons Kosher salt, and Cilantro if you are using it. We put in 2 halves of the lime into the soup for an extra punch of flavor. Let it all simmer covered for about 30-45 minutes. 

My husband, John, and I served ours differently. My version was the picture at the top -- with Plain Tortilla Chips and Cubed Avocado. John's is to add in Cilantro and Lime Tortilla Chips.

Carne Asada Tacos



 Carne Asada Tacos

*** This needs 12-24 hours to marinate

2 lbs flat iron steak (flank steak or skirt steak would work too)
1/2 cup white vinegar
4 tablespoons soy sauce
5 cloves of garlic
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon chili powder
1 teaspoon dried oregano
1 teaspoon cumin
1 teaspoon paprika
3 limes
1/2 cup + 1-2 tablespoons olive oil
1 medium onion, cut into strips
2-3 avocados, diced
1-2 roma tomatoes, diced
corn tortillas
cilantro (optional)

Combine vinegar, soy sauce, garlic cloves, salt, pepper, garlic powder, chili powder, oregano, cumin, paprika, juice of 2 limes, and 1/2 cup of olive oil in a gallon size plastic baggie. Add the meat to the marinade and then let it marinate for 12-24 hours.

Grill or broil for 5-7 minutes per side, and then let it rest. Heat a little bit of butter or oil in a pan and saute onion until it starts to caramelize. Mix avocados, tomatoes, juice of one lime, 1-2 tablespoons of olive oil, and cilantro if desired in a bowl. Slice the steak against the grain.

Assemble the tacos by adding some onion, meat, and a bit of the avocado salad on your corn tortillas. Enjoy!

Taco Dip





Taco Dip

1 pound lean Ground Beef
1 package Taco Seasoning
3/4 cup Salsa (I used Clint's - our favorite!!)
1 pint Sour Cream
3 ripe Avocados
2 cups Grated Cheddar Cheese (grating your own has more flavor)
Tortilla Chips

Brown your beef, and mix with Taco Seasoning according to package directions. (Most have you add water) Cool for about 10 minutes. Mix the salsa and sour cream in with the taco meat. Layer in the bottom of a 13x9 baking dish. Top with chopped avocados. Sprinkle the cheddar cheese on top of everything, and bake at 350 for about 15 minutes or until the cheese is melted.

Serve warm with tortilla chips. I put the remaining salsa out along with the dip as well.

Paula has you do it more in layers, (5 layers to be exact) but when we made it about a year ago it was dry - so we made this adaptation and it worked perfectly. The meat layer is much more juicy and it ends up making a nicer consistency for the dip in my opinion.

Pasta Fiesta

8 ounces pasta (she used bowties, but my kids won't eat that so I used the mixed fusilli)
1 pound lean ground beef
½ onion, chopped
½ green bell pepper, chopped
1 (15-ounce) can tomato sauce
1 tablespoon chili powder
1 teaspoon garlic powder
Salt to taste
Pepper to taste
1 cup sour cream
1 cup salsa (I used our favorite Clint's Salsa)
½ cup sliced black olives
1 can black beans, drained (this was just suggested, and I think it would be GREAT!)
¼ cup sliced jalapenos (optional - and I opted to not use them)
1 tomato, chopped (I skipped this too)
1 cup shredded Cheddar cheese


Cook the pasta using package; drain. Brown the beef in a skillet, and drain off any extra fat - depending on what mix of ground beef you use. Add in the onion and bell pepper sautee until tender, stirring constantly. Stir in the tomato sauce, chili powder, salt, pepper, and garlic powder.  Combine the pasta, ground beef mixture, sour cream, salsa, black olives, black beans, jalapenos, and tomato in a bowl and mix well. Spoon into a 9×13-inch baking dish. Sprinkle with the cheese. Bake at 350 degrees for 20 to 30 minutes or until brown and bubbly.

This was really good, and would be a super easy dish to make for delivering meals to a family in need. Just add in some crusty bread and maybe a salad.

Cheese Enchiladas with Rice & Beans






Cheese Enchiladas with Rice & Beans

Chili Sauce:
1/4 cup vegetable oil
1/4 cup flour
1/2 teaspoon black pepper
1 teaspoon salt
1 teaspoon garlic powder
2 teaspoons ground cumin
1/2 teaspoon dried oregano
2 tablespoons chili powder
2 cups beef broth, chicken broth or water (I used beef broth)

Heat the oil in a medium sized sauce pan, stir in the flour and cook 3-4 minutes to form a roux. Add all the spices to the flour mixture and allow to heat for a minute or two to develop the flavors. Then whisk in the beef broth/chicken broth/water - allow to simmer for 15 minutes. You can add more liquid.

Enchiladas:
1/2 cup vegetable oil (I skipped this and wish I hadn't once I was in the process of making them)
8 corn tortillas (I used 12)
8 oz Velveeta
8-10 oz Cheddar Cheese
1 medium onion, diced (I chopped mine finely because I served this to the babies)
2 cups of chili sauce

Preheat oven to 400. In a 9x13 pan - place a 1/2 cup of the chili sauce on the bottom of the pan.

If you use the oil, heat it in a small skillet - then dip each of the tortillas in the oil for a few seconds and keep them wrapped up until all are heated.

Chop up the Velveeta, and mix with grated cheddar and onions. Then place about 1/4 cup or so of filling in a tortilla and roll it up. Place the filled enchilada in your baking dish seam side down. Repeat for all of your remaining tortillas. Once you are finished - pour the remaining chili sauce over the top of the enchiladas. Put remaining cheese and onions on top and bake for about 10 minutes until everything is melted and bubbly.

I served with rice and beans that I made:

For rice - I used long grain white rice with chicken broth instead of water, added a can of diced tomatoes, a teaspoon of cumin and a teaspoon of garlic powder.

For the beans - I used a can of refried beans and added a 1/4-1/2 cup of Velveeta and 1/2 cup of the enchilada chili sauce.

This mean certainly made us feel at home - since we haven't found any Mexican restaurants here in Memphis that have filled the void for our Texan hearts.

1 cup sour cream
1 cup mayonnaise
1/4 cup milk
3 chopped jalapenos (leave the seeds in 1 for mild, 2 for medium, 3 for hot)
1 bunch chopped cilantro
juice of 1 lemon
3 chopped garlic cloves
1 packet ranch dressing mix (dry)

Put all ingredients in a blender and mix. Serve with tortilla chips.

Sopapilla Cheesecake

2 to 3 cans of crescent rolls
1 1/2 cups sugar
1 teaspoon Mexican vanilla
1 teaspoon cinnamon
2 1/2 (8 oz.) packages cream cheese, softened
1 stick butter

Preheat oven to 350F. Spray 9 X 13 pan with cooking spray, press 1 can of crescent rolls into bottom of inch pan - it make take 1 /12 cans to cover bottom of dish. Mix cream cheese, 1 cup sugar and vanilla until very creamy. Spread over rolls in pan. Cover with other can of rolls. Melt butter and spread onto top crust, sprinkle all the cinnamon sugar on top to this. Bake for 25 - 30 minutes.

Can serve at room temperature, but I think it’s better chilled. Kacy brought this to our small group game night last night, and we actually ate it warm and at room temperature. It was such a hit that none of it was left... we all kept going back for a little bit more. Yummy and really easy!

White Chicken Chili

1 tablespoon Olive Oil
2 medium Onions, chopped
4 cloves Garlic, minced or grated
4 Jalapenos, seeded and diced
6 cups Chicken Broth
1 teaspoon Coriander
1.5 teaspoon Mexican Oregano (we used regular Oregano)
1/4 teaspoon Cayenne
4 Tomatillos, husks removed and diced
3 cans White Beans, drained and rinsed
4 cups Roasted Chicken, chopped
1 cup Monterey Jack Cheese
Tortilla Chips

Garnishes:
Sour Cream
Cilantro
Monterey Jack Cheese

Heat olive oil in a large pot. Add onions and garlic, sautee until soft. Add jalapnoes, broth, spices, beans and tomatillos. Simmer for 90 minutes.

Add chicken and cheese, simmer for 30 minutes.

Serve over crushed tortilla chips. We set the garnishes out so that our guests could choose what to add on top... we just had this for small group last week, and everyone seemed to really like the recipe.

Chicken Fajita Salad

First off, let me just say this is not the photo that I took... but it's something.

I made enough chicken for 4 salads, but the rest of the measurements are for each salad... you might want to add a little more or less of some ingredients based on your tastes and hunger levels.


2 chicken breasts (I planned on 1/2 a breast for each meal for myself)
1 bottle Wishbone Italian salad dressing
1/4 head romaine lettuce per serving (more if you have big eaters)
1/4 roma tomato per serving
2 tablespoons grated cheddar cheese per serving
3 teaspoons homemade guacamole per serving (recipe at bottom)
2 teaspoons sour cream per serving
1 teaspoon salsa per serving (I used one called Hell on the Red in the mild version)


Marinate the chicken in the Italian salad dressing for a couple of hours - up to a day depending on your tastes.


Since my grillmaster isn't eating solid foods - I took the liberty of putting the chicken on a broiling pan and baking for about 30 minutes at 350 - then it switched it over to broil at 400 for another 15 minutes or so. (Just until the edges browned up a bit)


To make the guacamole - we used two avocadoes, one chopped roma tomato, 1/4 of a medium onion chopped, a little salt & pepper, and the juice of one fresh lime. Mash the avocadoes and mix in the rest of the ingredients in a bowl... taste for perfection. We sometimes need to add more lime juice, but this time our lime was really juicy.


I mixed the guacamole, sour cream and salsa into a thick dressing like mixture... to mix with the other ingredients whenever I am ready to have my salad (grab and go!) . The dressing is in small individual containers as I have enough for 4 salads throughout this week.


Slice the chicken breasts, and in my case - I put the slices in individual containers for grab and go.


In another bowl - add the Romaine, tomatoes, and cheese... add the chicken slices on top, and mix with dressing mixture.

Fajita Chicken Wraps

I've been buying a half order of this wrap for the last two weeks at the store, they have a great prepared foods section... and this has been my lunch for the last two Sundays. So the recipe is my adaptation of what I've been eating.

Yield: 4 (I think)

4 boneless skinless chicken breasts
1 bottle Wishbone Italian Salad Dressing
4 wrap sized tortillas
1 medium onion
1 bell pepper (red, yellow or green)
1-2 tablespoons olive oil
2 cups shredded cheddar/monterrey jack blend

Season the chicken, and place in a large gallon sized baggie with the salad dressing for at least 30 minutes. I've been known to put this on in the morning before going to work when we make fajitas just so that the marinade has time to really soak into the meat.

Grill the chicken, and set aside to rest.

Slice the bell pepper and onion. In a large skillet place the olive oil over medium-high heat, then add the vegetables and sautee until soft and lightly browned. Set aside to cool.

Slice the chicken or cube it depending on your preference.

Lay out the tortillas, and layer in the cheese (about 1/2 cup per wrap). Add 1/4 of the vegetables next, and follow it by 1/4 of the chicken. Wrap and slice in half for serving. I personally like everything to be warm so that the cheese melts slightly, but you could eat this cold too.

You might want to serve this with a little sour cream and guacamole for an added bonus... I would use it as a dip, but you could add it inside the wrap too if you'd rather.

Beef Tortilla Casserole

An enchilada dinner kit creates a hearty beef casserole that's in the oven in just 20 minutes.

Prep Time: 20 min
Total Time: 50 min
Makes: 6 servings

1 lb lean (at least 80%) ground beef
1/2 cup chopped onion
1 box (14.2 oz) Old El Paso® enchilada dinner kit
1/2 cup water
1 can (4.5 oz) Old El Paso® chopped green chiles
1 cup sour cream
1 cup shredded Cheddar cheese (4 oz)


1. Heat oven to 350°F. In 10-inch skillet, cook beef and onion, stirring occasionally, until beef is thoroughly cooked; drain. Stir in both pouches enchilada sauce (from dinner kit), the seasoning mix (from dinner kit), water and chiles; heat until hot.

2. In ungreased 11x7-inch baking dish, spread 1 cup of the beef mixture. Cut tortillas (from dinner kit) in half. Place 6 tortilla halves on beef; spread with 1/2 cup of the sour cream. Top with 1/2 cup of the cheese, 1 cup of the beef mixture and remaining 6 tortilla halves. Top with remaining sour cream, remaining beef mixture and remaining cheese.

3. Bake 30 minutes.

If desired, serve with additional sour cream, diced red bell pepper and chopped fresh cilantro.

High Altitude (3500-6500 ft): Heat oven to 375°F.

Armadillo Eggs


Don't ask me why they are called this - but it's John's family recipe... so I'll go with it. For those that might ask (it's happened several times over the years) - NO - they aren't really armadillo eggs... and by the way armadillos are mammals - which means they DON'T lay eggs!

1 large can whole jalapenos
1 large block cheddar cheese
2 pounds patty sausage
1 package shake 'n bake

Grate the cheese and set aside. (We grate our own because it has more flavor than the prepackaged grated cheese that you find in the grocery stores.)

Slice jalapenos in half and clean out seeds. Keep the two halves together because you'll be putting them back together, and you'll want them to match. Stuff the middle with cheese - John squishes the cheese into a solid mass before he stuffs it in the jalapeno - place them on a baking sheet until all of the jalapenos are stuffed.

Slice the sausage into enough patties to match the number of jalapenos you have. Ours usually works out perfectly with 21 eggs in the end. Flatten out a sausage patty and wrap it around a stuffed jalapeno... seal the edges together. Repeat until all of the jalapenos are wrapped in sausage.

Roll in shake 'n bake. Place on a broiler pan and bake at 350 degrees until sausage is brown - about 30-40 minutes.

Serve and enjoy!

When John makes these for his office parties - he slices them into 3 or 4 pieces and inserts a toothpick in each slice for easy serving.

Layered Chile-Chicken Enchilada Casserole

Yield: 8 Servings

2 cups diced cooked chicken
3 cups shredded Colby-Monterey Jack cheese blend (12 oz)
1 can (4.5 oz) Old El Paso® chopped green chiles, undrained
3/4 cup sour cream
1 package (11.5 oz) Old El Paso® flour tortillas for burritos (8 tortillas)
1 can (16 oz) Old El Paso® refried beans
1 can (10 oz) Old El Paso® enchilada sauce
4 medium green onions, sliced (1/4 cup)
1 cup shredded lettuce
1 medium tomato, chopped (3/4 cup)

1. Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In medium bowl, mix chicken, 1 1/2 cups of the cheese, the chiles and sour cream.

2. Layer 3 tortillas in baking dish, overlapping as necessary and placing slightly up sides of dish (cut third tortilla in half). Spread about half of the beans over tortillas. Top with about half of the chicken mixture and half of the enchilada sauce. Layer with 3 more tortillas and remaining beans and chicken mixture. Place remaining 2 tortillas over chicken mixture, overlapping slightly (do not place up sides of dish). Pour remaining enchilada sauce over top. Sprinkle with remaining 1 1/2 cups cheese.

3. Cover baking dish with foil. Bake 45 to 55 minutes or until bubbly and thoroughly heated. Let stand 5 to 10 minutes before cutting. Garnish casserole or individual servings with onions, lettuce and tomato.

High Altitude (3500-6500 ft): Heat oven to 375°F.

Do-Ahead: Make this casserole up to 8 hours in advance, then cover and refrigerate until it's time to bake it.

Mexican Appetizer Rollups

1 (8 oz.) pkg. cream cheese softened
3/4 cup Thick and Chunky Picante Sauce
8 to 10 6-inch flour tortillas
2 cups Cheddar or Monterrey Jack cheese

1. Mix cream cheese, picante sauce and 1 cup of the grated cheese until creamy. Place one tortilla on serving dish and spread with a layer of the mixture. Repeat with remaining tortillas. Cover with plastic wrap and refrigerate for at least an hour.

2. Cut into pinwheels to serve.

If desired, add sour cream, guacamole, or extra picante sauce to the mixture.

Taco Bean Chili Soup

2 cans beans of your choice (such as kidney beans and black beans)
2 cans corn of your choice (such as hominy and sweet corn)
2 cans tomatoes of your choice (such as Rotel Original, and any Hunts Diced variety)
2-3 tablespoons cumin
2-3 tablespoons oregano
2-3 tablespoons garlic powder
1-2 tablespoons onion powder
1 tablespoon paprika
1 tablespoon chili powder
1/4 cup milk

Empty the entire contents of all the cans into a pot. Sprinkle in all of the seasonings and simmer until the beans are soft and the flavors have melded together. Maybe 30 to 45 minutes. Or pour into a crock pot and simmer all day.

Enjoy with chips or corn bread. Add a dollop of sour cream and chives on top for garnish.

Optional:
Add 1 pound ground beef or turkey
In lieu of the seasonings, simply add a package of taco seasoning. You can then add additional spices to taste.

Tacos with Salsa

We have only followed this recipe to make the taco meat, but I'm confident that the remaining portions of the dish are divine. We got tired of the prepackaged taco seasoning mixes, and wanted something a little more healthy.

2 tomatoes, diced
4 teaspoons olive oil
1 white or yellow onion, finely chopped
2 garlic cloves, minced
1 teaspoon minced seeded jalapeno pepper or to taste
2 teaspoons ground cumin
1 teaspoon dried oregano
1 teaspoon paprika
1 pound lean ground beef (10% or less fat)
1 cup canned diced tomatoes (we use the whole can)
1/2 teaspoon salt
Freshly ground pepper, to taste
1/2 cup finely chopped fresh cilantro
1 red onion, finely chopped
2 tablespoons fresh lime juice
8 taco shells
2 cups shredded iceberg lettuce or romaine lettuce
1/4 cup fat-free sour cream

Place the fresh tomatoes in a strainer or colander in the sink; drain 20-30 minutes.

In a medium nonstick saucepan, heat the oil. Saute the white onion, garlic, and jalapeno pepper until the onion is translucent, 6-8 minutes. Stir in the cumin, oregano, and paprika; saute until fragrant, about 1 minute.

Add the beef and cook, breaking it apart with a wooden spoon, until no longer pink, 8-10 minutes. Add the canned tomatoes, 1/4 teaspoon of the salt, and the pepper. Reduce the heat; simmer until thickened, about 10 minutes.

To prepare the salsa, in a medium bowl, combine the fresh tomatoes, cilantro, red onion, and lime juice; season with the remaining 1/4 teaspoon of the salt and pepper.

Chicken Quesadillas & Corn Salad

If you can't tell - I live with a man that loves Mexican food... he could eat it everyday if I'd let him... so I try to work it in whenever possible.

Chicken Quesadillas & Corn Salad

Corn Salad
1 cup thawed frozen corn kernels
1/2 green bell pepper, seeded and diced
1/2 tomato, seeded and diced
2 tablespoons chopped fresh cilantro
2 teaspoons balsamic vinegar
1/4 teaspoon salt

In a small bowl, combine all salad ingredients and set aside.

Quesadillas
1 1/2 cups diced cooked chicken breast (We marinated ours in Wishbone Italian salad dressing and then grilled it. The same as we would do to prepare fajitas.)
1 cup shredded iceberg lettuce (We left this out because John hates wilted lettuce.)
1/2 cup thick and chunky salsa
6 (8-inch) flour tortillas
1/3 cup shredded sharp cheddar cheese

To prepare the quesadillas, in another medium bowl, combine chicken, lettuce, and salsa; divide amoung 3 of the tortillas. Sprinkle with the cheese, top with the 3 remaining tortillas.

Spray a large nonstick skillet with nonstick cooking spray. (We skipped this step and there was enough fat in the tortillas to do the job. They were nice and toasted.) One at a time, cook the quesadillas until lightly browned, 3 minutes on each side; turn carefully with a wide spatula.

Cut the quesadillas into quarters; arrange 3 quarters on each of 4 plates. Serve with the salad on the side. (We also included a tiny bit of guacamole and a small amount light sour cream for dipping.)

Per serving: (3 quesadilla quarters and 1/2 cup of salad)
