Crock Pot Turkey Breast





Crock Pot Turkey Breast

1 Turkey Breast Roast
1 stick butter
1 package of dry onion soup mix

I season the meat with salt, pepper, and a sprinkling of garlic powder before putting it in the crockpot. 

Put it all in the crockpot for about 6-8 hours and... trust me, you will be the family hero! We serve it with some roasted broccoli and stove-top stuffing. It's an amazingly quick and easy dinner!

** Note -- Leave the turkey breast the way it is in the photo below, it makes life much easier and allows for even cooking.

Cathi's Turkey Burgers

1tbls dijon mustard
8-10 oz of spinach (thaw and squeeze dry)
salt
pepper
garlic
minced onion
1 lb ground turkey
1 egg (added by John to a double batch)
1/4 cup bread crumbs (added by John)

Mix all ingredients together. Grill them until they are done, or you could pan fry them. Serve with your favorite hamburger toppings... we also put them on whole wheat hamburger buns.

** This recipe could be used with ground beef, ground pork, ground white meat turkey, or even ground chicken... I don't know if you can get ground seafood - but try it with your favorite ground meat!

Fennel Seed Turkey Muffins

2 pounds extra lean ground turkey
2 egg whites
2 tablespoons fennel seeds
juice of 1/2 a lemon
2 teaspoons salt
2 teaspoons Greek seasoning
1 teaspoon garlic powder
1 teaspoon onion powder

Preheat oven to 350. Stir all ingredients together. Weigh 2 ounces of mixture per muffin cup - you will want a mini muffin tin for this recipe. Cook in oven for 20 minutes. This should yield 15-16 muffins.

Fat Free Tzatziki Sauce

16 ounces fat free Greek yogurt (plain)
2 cucumbers, peeled and diced
1 tablespoon olive oil
juice from 1/2 lemon
salt and pepper to taste
1 tablespoon chopped dill
3 garlic cloves

In a food processor or blender, combine all ingredients until well combined. Refridgerate for at least one hour for the best flavor.

Homestyle Turkey Meatloaf

Homestyle Turkey Meatloaf

2 teaspoons olive oil
1 1/2 cups onion, chopped
1/2 teaspoon dried thyme
1/2 teaspoon cayenne
1/2 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon black pepper
3/4 pound mushrooms, trimmed and chopped
4 large garlic cloves, minced
1 (15 ounce) can great northern beans, drained
1 1/4 pounds extra lean ground turkey
2 large eggs
1/2 cup chopped fresh parsley
4 teaspoons Worcestershire sauce
2 teaspoons Dijon mustard, plus extra for dipping

This healthy alternative to the typical meatloaf adds white beans for a delicious high-fiber twist. Serve extra Dijon mustard on the side for extra flavor.

Chop onions and mushrooms, and set aside. Heat the oven to 375 degrees. Lightly coat a loaf pan with cooking spray.

In a large skillet, heat oil over medium-high heat. Add onion, thyme, cayenne, paprika, salt and pepper. Reduce heat to medium-low and cook; stiring occasionally, for 5 minutes. Add mushrooms and garlic; cook, stirring occasionally, until onion is softened and mushrooms are incorporated, about 5 minutes longer. Add beans and stir to combine. Transfer mixture to a bowl and let cool, about 5 minutes.

In a large bowl, combine cooled bean mixture, turkey, eggs, parsley, and 2 teaspoons of the Worcestershire sauce. Mix well with wet hands or the dough hook of a stand mixer to combine. Form into a loaf and place into the prepared pan. Stir together mustard and remaining 2 teaspoons of the Worcestershire sauce and set aside.

Bake meatloaf on the middle rack of the oven for 50 minutes. Remove from the oven and brush with the mustard and Worcestershire sauce mixture. Return to the oven and continue baking 10-15 minutes longer, or until a thermometer inserted into the middle of the meatloaf registers 170 degrees. Let meatloaf stand for 5 minutes before serving. Serve with additional Dijon mustard on the side.

This would be great with a salad, and maybe some sauteed spinach.

Turkey Meatloaf and Mashed Potatoes

Yield: 6 servings

Spinach, whole-wheat bread crumbs, and lean turkey boost the fiber and reduce the fat in this hearty classic. Buttermilk in the potatoes lowers the saturated fat too.

1 1/2 pounds lean ground turkey
1 onion, chopped
1 bunch, fresh spinach - thick stems removed and leaves chopped (about 4 cups)
1 cup flat-leaf parsley, chopped
1/2 cup whole-wheat bread crumbs
2 tablespoons Dijon mustard
1 large egg white
kosher salt and black pepper
1/4 cup ketchup
2 pounds red potatoes, quartered
1 cup buttermilk
1 tablespoon olive oil

Heat oven to 400 degrees. In a bowl, combine the turkey, onion, spinach, parsley, bread crumbs, mustard, egg white, and 1/2 teaspoon each salt and pepper.

Transfer the mixture to a baking sheet and form it into a 10 inch loaf. Spread with the ketchup. Bake until cooked through, 45 to 50 minutes.

Meanwhile, place the potatoes in a large pot of cold water. Simmer until tender 15 to 18 minutes. Drain the potatoes and mash in the pot with buttermilk, oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper.

Serve meatloaf with potatoes.

Turkey Scaloppini

Yield: 4 servings

1.25 pounds turkey tenderloins
1/2 teaspoon salt
1/2 teaspoon pepper
1/3 cup Parmesan, grated
1/2 cup soy flour
1/4 cup parsley, minced
4 large eggs beaten
1 pinch thyme, optional

Slice turkey tenders cross ways into 1/4" medallions. Lay flat on a plate and sprinkle with salt and pepper.

Sprinkle 1/2 of the Parmesan cheese over slices and firmly press into medallions with your fingers. Repeat on other side.

Mix the parsley, thyme, and flour - spread on a large plate. Arrange a single layer of medallions on the flour. Press into flour, turn over and repeat.

Preheat a large nonstick skillet over medium heat and add a tablespoon of vegetable oil. Dip and submerge each medallion in egg and quickly place into skillet. Cook in batches about 2 1/2 minutes per side until browned.

Serve immediately with lemon wedges.

Taco Bean Chili Soup

2 cans beans of your choice (such as kidney beans and black beans)
2 cans corn of your choice (such as hominy and sweet corn)
2 cans tomatoes of your choice (such as Rotel Original, and any Hunts Diced variety)
2-3 tablespoons cumin
2-3 tablespoons oregano
2-3 tablespoons garlic powder
1-2 tablespoons onion powder
1 tablespoon paprika
1 tablespoon chili powder
1/4 cup milk

Empty the entire contents of all the cans into a pot. Sprinkle in all of the seasonings and simmer until the beans are soft and the flavors have melded together. Maybe 30 to 45 minutes. Or pour into a crock pot and simmer all day.

Enjoy with chips or corn bread. Add a dollop of sour cream and chives on top for garnish.

Optional:
Add 1 pound ground beef or turkey
In lieu of the seasonings, simply add a package of taco seasoning. You can then add additional spices to taste.
