Kensington Club Marinade

This is a marinade that can makes beef and or chicken taste great. (I'd put it on just about anything!!) This recipe is very close to the original-try granulated garlic instead offresh- a lot easier and in original recipe. The main reason this steak isdifficult to duplicate in flavor is because Steak & Ale marinates its Kensington Club steak and chicken for 36 hours before grilling. That'sright, 3 days! But its worth the wait.

3.5 cups Pineapple Juice
1 cup Soy Sauce
1 cup Dry White Wine
1/2 cup Red Wine Vinegar
3/4 cup Sugar
2 tsp. Garlic, minced fine

Preparation:
Simply mix all together. You can let the meat sit in here for up to 24 hours. I would highly suggest a grilling.

Kim, excellent recipe and tastes almost exactly like the S&A steak. I had a little problem with your math though. Isn't 36 hours hours closer to a day and a half than 3 days?

Worked for S&A for years... Your recipe is close, but replace white wine with dry cooking sherry, & use cabernet for exact flavor. The marinade should be for 24 hours, after you drain it to prevent making the meat dry because of the alcohol. The shelf life is 3 days from the 24 hour marination process for both steaks & chicken.

We have enjoyed a similar recipe for years. Can't wait to try this one. However, Filets have become so expensive we now use sirloin like the original Steak & Ale. Costco has a very nice sirloin with nice marbling.
