1 1/2 pounds fingerling potatoes
4 tablespoons olive oil
4 tablespoons butter
8 garlic cloves, sliced
1 tablespoon freshly chopped italian parsley
salt and pepper to taste
Preheat the oven to 350 degrees.
In a casserole dish; mix together - potatoes, oil, butter, garlic, parsley, salt and pepper. Roast for 20 minutes or until the potatoes are tender.
